“For our selection, we focused on the cooler parts of the vineyard from the limestone foothills of Montagne Sainte Victoire, whose wines are almost marked by a vivacious and persistent minerality, to the vineyards of upper Provence. There, the clay-limestone soils and the oak and olive forests protect the vines and, in some ways, seem to nourish them. The higher altitudes also allow full maturity without excessive sugars (and therefore alcoholic degree in the finished wines).
Our vineyards are harvested at night between 3.00am and 9.00am in order to avoid oxidation and to preserve all of the fresh characteristics of vineyard and varietal. And it is our personal decision to avoid excessive maceration and extraction leading to wines that are at once concentrated but not opaque. Grenache and Cinsault are macerated together so that their personalities and qualities intermingle.” -Gregory Hecht
