To celebrate the distillery's 70th anniversary, Siete Leguas commemorated the occasion by crafting a single-run expression that veered from their core lineup for the first time in the distillery's 70-year history. This release uses a 100% ancestral method featuring wild Agave Criollo. Unlike standard, neatly cultivated estate agave, these heritage plants grow completely untamed on the steepest, most punishing rocky cliffs of the Rancho Las Trojes estate. Deprived of irrigation and agricultural aid, these unique agaves battle the harsh Jalisco elements and mature slowly over up to 10 years without human intervention. This decade-long natural struggle keeps the piñas small and compact, but leaves them incredibly dense and tightly packed with highly concentrated sugars and deep mineral complexity.
The precious wild piñas are cooked in traditional brick ovens, entirely crushed by a 100% mule-driven volcanic stone tahona wheel, and naturally fermented and double-distilled in copper pot stills alongside the actual agave fibers (bagazo). Bottled unaged at a robust 42% ABV (84 proof), this limited edition of only 70,000 individually numbered bottles is a true one-time event that will never be reproduced. Highly sought after by collectors and purists, its tasting profile is celebrated for a dense, viscous texture that explodes with bright notes of rich cooked agave, citrus peel, white peppercorn, and a deeply complex, earthy mineral finish.
